How To Brew John J Palmer was created by Beef
G'day,
I was consulting the Bible of brewing the other night(How To Brew 4th) and wondering if any one here has done any of the extract recipes from the book, most of them use Dry malt, I have a friend that brews extract still, and is looking for something new, There are a lot of recipes in the book, just wondering how close to AG they are, and if there worth having a look at, I am about to brew the Irish Red from the book..........Maybe tomorrow, Have a good weekend, Cheers

Can't say I've brewed his extract recipes, but I had a quick look and it looks ok! You can brew some nice beers with extract. hoppy ones and dark beers, beers with a lot of flavour can turn out excellent. Its the lagers and pilsners that you really start noticing the extract in my opinion. Have a good brew day! Cheers!

Since winning the How To Brew Book (Thanx Gash ya legend) I have used his techniques and recipe ideas and the results are good, I cant compare them to all grain brews as I am still an extract brewer. That being said just the simple technique of steeping your grains in some malted rather than straight water has changed my brews for the better.
An example is to dissolve 500g of LDME in the water and stir as the water comes up to 70C and then steep for 30mins as per usual, I now use this technique for all of my steeping and it helps to turn your trusty old Coopers can into hoppy goodness.

Gash and Finaroo,

I did actually reflect after my Hoppy Goodness comment and thought I bet they think steeping hops but nope its creating wort by dissolving half of the extract if you are doing a full extract brew or,
In the case of my Kiwish Pale Ale and using a Coopers Pale Ale tin for my base I dissolve 500g of LDME in 3L of water to create my wort and then steep the grain in that wort for 30 min @70C then rinse with 2L of water @70C to bring it up to 5L for my 20 min boil.
Finaroo you are right about the pH and to quote John Palmers book " it improves the wort pH and, along with moderating the steeping temperature, also reduces the risk of bitter tannin extraction from the Grain husks"
I have since reading the book I have used this technique and I believe it has improved my brews the flavor, lacing and mouth feel is much improved especially when I previously just used Coopers BE2 for the whole mouthfeel thing and it seems to bring it up to the next level.

Well it was just a guess and a thought. I keep coming back to the one brew over and over. and learning about our brewing process what ever it may be.. cheers guys brew on.
