Home brew Punk IPA Clone first printed in BYO Magazine Jan/Feb 2010, made with advice from the brewdog guys themselves.
5 Gallons/ 19L OG=1.060 FG=1.014 IBU=62 SRM=8 ABV=6%
Ingredients
2 lbs (0.91kg) Maris Otter pale malt
3 lbs (1.4kg) Muntons Extra Light dried malt
3.3 lbs (1.5kg) Muntons Extra Light liquid malt (late addition)
16 AAU Columbus hop pellets (90mins) 1.5oz/ 45g at 11%
8.0 AAU Ahtanum hop pellets (0mins) 1.0oz/ 28g at 8%
1.0oz/ 28g Amarillo hop pellets (dry hop)
White Labs WLP007 (dry English ale yeast) 1qt/ 1L starter
Method
To get an acceptable level of hop utilisation, and the correct bitterness, you must be able to boil at least 3.5 gallons/ 13L of wort.
In a large pot steep crushed pale malt in 3qts (2.8L) of water at 149F(65C) for 45 minutes.
While grains are steeping begin heating 2.75 gallons (10L) of water in your brewpot.
Lift grain bag , place in a collander and slowly rinse grains with 1.5qts (1.4L) of water at 169F (76C)
Add 'grain tea' from steep and dried malt extract to your brewpot to make at least 3.5 gallons (13L) of wort.
Boil wort for 90 minutes, adding Columbus hops at the start and Ahtanum hops at knock-out.
Stir in liquid malt for the last 15 minutes of the boil.
Keep a pot of boiling water handy and add water if brew pot volume drops below 3.5 gallons (13L)
Cool wort and transfer to fermenter and top to 5 gallons (19L) with cool water.
Add yeast and oxygenate well and let ferment for 3-5 days and add the Amarillo hops in a sterilised muslin bag.
Rack after one or two weeks, and bottle or keg as desired.
