Sierra Nevada Pale Ale Clone - AG, Mini & Extract

All Grain, Mini Mash and Extract Versions.

Extract

3kg (6.5lb) Light Dried Malt Extract
115g (4oz) 60L American Crystal Malt
115g (4oz) Maltodextrin
28g (1oz) Nugget @8.2% AA (8.2 HBU) (Bittering Hop) (60mins)
14g (1/2oz) Perle (Flavour Hop) (15mins)
28g (1oz) Cascade (Aroma Hop) (1min)
14g (1/2oz) Cascade (Dry Hop)

Yeast Preferred - Wyeast 1056 American Ale Yeast or Safale US-05

Crack and Steep grain (Crystal) in 1.9L (1/2 Gallon) of 65.5c (150F) for 30 mins.
Strain the grain into your brew pot. Sparge (rinse) the grain with another 1.9L (1/2 Gallon) of 65.5c (150F).
Add sparge water to brew pot for 5.7L (1.5 Gallons) total volume. Bring to the boil then remove from heat.
Add Light Dried Malt Extract and Maltodextrin. Mix well.
Add water until volume in brew pot is 9.5L (2.5 Gallons)
Bring to the boil and add Nugget Hops.
Boil for 45mins then add the Perle Hops and the Irish Moss.
Boil for a further 14mins.
Add Cascade Hops (28g Aroma Hop)
Boil for a further 1min.
Cool wort , pour into fermenter and top to 19.5L (5 1/8 Gallons)
When the wort temperature is under 21c (70F) pitch your yeast.
Ferment for 7 days in primary then rack to secondary. Add Cascade Hops (Dry Hop).
Bottle or Keg after another 7 days.
This beer will be ready to drink as soon as it is carbonated but will peak at 1-3 months. Serve at 7c (45F)


Mini-Mash

Mash 1.5kg (3.25lb) American 2-Row Pale Malt with the specialty grains at 65.5c (150F) for 90mins. Then follow the extract recipe omitting 900g (2lb) Light Dried Malt Extract at the beginning of the boil.


All Grain

Mash 5kg (11lb) American 2-Row Pale Malt with the specialty grain at 66.7c (152F) for 90mins. Add 19.9g of Nugget @8.2% AA (5.8 HBU) (***29% less then the extract recipe above) for 90mins of the boil. Add the flavour hops and Irish Moss for the last 15mins of the boil and the aroma hops for the last minute.

Brewing a familiar Dark Mild later today. (hint: Was the bastard tired? Or was he run over by a tire (tyre). No one really knows). One thing for sure. It will be a treat when done. Cheers!
