Most recipes I’ve seen say to cold steep overnight.
My question is can you do it for longer say 2 days any benefit or problem in doing this

I cant see any benefit to it at all, longer you leave it more chance of something nasty taking hold. So you can but no real use and raises risks of souring, you're going to boil it, but still might not taste great. Cheers
