Good morning, Im keen to brew a hefe weizen later in the week. A simple recipe and maybe some pointers would be much appreciated. 5%ABV something like that. Cheers

Sorry mate, had a busy weekend!

50% Wheat Malt 2.5kg approx
50% Pilsner 2.5kg approx

Hallertau or similar to 13 ibus @60mins

Yeast WLP300, Wyeast 3068
or dry Safbrew WB-06, Lallemand Munich Classic Wheat Beer Yeast, M20 Mangrove Jack's Bavarian Wheat Yeast

I'd mash at 67c. and ferment at 17c with a healthy pitch, start upping the temp after 4 or 5 days.

Not much else to them, do a nice starter or use a couple packs and be good to go!

No grief and a good smooth sparge. The hops I used were wakatu, Hour and a half boil, forgot to take a gravity reading, but no biggie. Also forgot to drop my sparge water ph down and forgot to add a little gypsum to the mash. Did my starter in the morning and went well and just now checked the brew and she going hard out with a good inch of krauzen at 17degc. Will i ramp the temp strait up to 22degc after 4 days or slowely over the coarse of 4 to 5 days after the initial 4 days at 17degc.? Cheers
