Thanks to Grain and Grapes System Wars, Good Beer Week 2014

Brendan from boneyard has sent through his recipe for his system wars beer.

Brendan's Peated Habanero Imperial Stout

OG: 1.100
IBU: 80
Colour: 55 SRM

Fermentables:
4kg Australian Ale (38.1%)
2kg German Munich (19.0%)
1.3kg Golden Naked Oats (12.4%)
1kg English Medium Peated (9.5%)
450g Carafa III (4.3%)
250g CaraAroma (2.4%)
250g Special B (2.4%)
150g Pale Choc (1.4%)
100g Midnight Wheat (1.0%)
1kg Belgian Dark Candi Syrup Type II (9.5%) - late kettle addition
6.5g chalk (mash)

Mashed at 65C for 60 mins, sparged at 76C

1g gypsum (kettle)
1g calcium chloride (kettle)
90 minute boil

Hops:
40g Simcoe 60 mins (55 IBU)
40g Columbus 10 mins (23 IBU)
40g Centennial 0 mins
40g Simcoe 0 min

Other:
Approx 3 Habaneros (flame roasted, de-seeded, de-veined and added at start, mid and end boil)
5g Amchur (green mango powder) 60 mins
2 lemons (zest only), 30cm stick of lemon scented verbena and 1 mesquite smoked Rocoto chilli steeped in Maker's Mark Bourbon and Angostura Bitters then added to the kettle 15 mins before flameout

Kit Brew Day Tomorrow, Black Rock Pale ale and number 40 larger brew enhancer by mangrove jacks. And possibly some honey. Yeast US05 ??

Brewing a familiar Dark Mild later today. (hint: Was the bastard tired? Or was he run over by a tire (tyre). No one really knows). One thing for sure. It will be a treat when done. Cheers!
