I've been thinking about doing a brew with honey. From what I've read, it seems that the honey needs to be heat treated to kill off wild yeast and enzymes to get any residual sweetness from the honey in the finished beer.
I'd be interested to know if anyone has tried this and what the results were like.

I think just about all the honey qualities are lost if adding early in the brew process (to the boil), and there is a danger of botulism if allowed to sit in wort. If I was to use it, and wanted to be able to tell it was there in the beer I'd probably do as you said heat treat it and add it to the brew after fermentation had slowed, or too secondary if you use them. This honey will still be eaten by the yeast but hopefully would leave behind more of its flavour then when adding late or early in the boil.

If you use honey in the boil it will ferment out like any other fermentable and lose all its flavour in the process, sugar is cheaper if you must. Heat it to 70 celsius for 15 minutes and add it after about a week of primary fermentation and then proceed as normal, the yeast will still nibble away on it but a lot more slowly leaving behind a lot more of its natural flavour. :woohoo:
