Thanks Antiphile mate for taking the time to give me some info - really appreciate the help. I was thinking at first to get a large HLT with 2 elements and use it as BIAB to start with and then move to the 3 vessel setup. I was thinking of the following:
*Large pot with temp gauge and 3 piece ball valve
*1 x 1500w and 1 x 2000w elements
*1 temp controller and thermowell
*False bottom
*Wort chiller
What u think mate?

I'll second the Esky comment. Mine is slightly larger again and whilst my efficiency is all over the place it is already telling.

I shopped around hard for my 47 liter stainless pot. Its a mid level quality pot, but has a heavy duty base (i use gas) for $60 NZD

Personally if i had the budget i'd save most of the 800 and put it towards kegging. My entire setup was $500 NZD thats all the AG equipment, Fridge, temp control, fermentation gear, chillers, bottles and all the extras like Starsan etc The esky was free, hence its size. I'm working on getting a round drink cooler now for free hopefully

Yep an esky is a great mash tun mine is about 32L I wouldn't go any bigger for normal batches, and a manifold is very cheap to make out of cPVC. My original mash tun cost about $30 for the esky and about $20 worth of parts for the manifold, and besides a a coupe of small changes I'm using the same mash tun now. A copper manifold is also cheap to make if you would prefer it would add probably another $20-$30. I added a proper thermometer to mine which was $35 so for around $100 you can have a decent mash tun that could last a long time.

My HLT is an old keg I got for free, but to buy a second hand isn't really that expensive in shops here they are about $40-$100. I just added a ss tap setup $35, a shop bought element $40 and a sight glass $30. So its around $200 but thats an all stainless setup. It could be made cheaper.

By boil pot kettle is a 40L Aluminium pot ($70) but I use two cheap $7 elements in that and another tap set up around $30. So that was about $115.

add some silicone hose $30 and maybe $40 of bits and pieces for fittings etc.

Thats easily under $800

But it depends which way you want to go for another $200 you could go a gas burner for boil etc.

Cheers Gash for the info mate. Not sure which way to go - was only thinking of BIAB first as i have a baby on the way - so time is fairly important atm. Just cant go back to extract after the last few brews of made - which was your S.Nevada mini mash and a 10 ltr all grain batch. It takes longer to make but its bloody worth it. Cheers again for the help and hopefully ill come up with something in the coming weeks.
