:unsure: Hi Brewers, I have a problem with my last 3 out of 4 brew going bad during fermentation.

It has been as you all know here in NSW and my brews have been getting rather hot while I have been at work. At times I have seen the temps up to approx 28deg.

Now my question is - Is this why I have been loosing brews, I am pedantic about sanitation and clean working area. I clean everything after a brew and before the next one.

Help.

G'day Heat like that will make most yeasts taste bad, it wont make them infected though, but they can taste pretty bad sometimes like green apples. Temperature control is more important for good tasting beer than any sanitiser, as long as your equipment is cleaned correctly. Both are important don't get me wrong, but unless you use specific yeast for certain temps its usually going to turn out bad, and most of the higher temperature yeasts do throw a lot of flavours that not everyone likes can be banana or clove or different styles of beer. If you want a nice clean yeast flavour like most of the beers you buy then you need to controls temps, lagers 9c-15c and ales usually 16c-20c. So it's either get some form of fermenting chamber, old fridge you pick up from a buy/swap/sell page that still works for free or you know maybe $50 or you brew all your brews during winter and stock up for summer. Keeping ferments warm is easy with atemp controller and heat belt/pad but keeping cool you need a fridge or freezer. Hope that helps! Cheers!

but as I said that doesnt cause infections if thats what you think you have, although I guess if it was hot enough to kill or stop any yeast you may be using then yeah other bugs just from the air could take hold I guess, but you'd have to be pretty unlucky for that.
