Hi, I'm new to this brewing hobby and put my second batch of beer in last week, it has been brewing now for over a week but there is still bubbles in the airlock. The instructions say 4-7 days. What should I do, is my beer going to be alright? It is a Coopers Draught kit and brew enhancer 1. Steve

G'day Steve, and welcome to Cellar Dwellers. I wouldn't worry at all mate, some of the information that comes with brew kits can be a little misleading, they want to you to think it will be ready in a week or less, but truthfully if you want it to taste its best you are better off leaving it for around 10-14 days. Once airlock activity stops you want to leave it for another week if possible, it gives the yeast some time to clean up after itself, essentially the yeast runs out of food and starts eating some of its own waste and some other things that your beer is better off without.

Just leave it for another week and you should be fine. Or wait till the airlock activity stops, which should be very soon and you can start taking your hydrometer readings and when they are constant you are right to go.

Lower fermentation temperatures will slow the fermentation process but will also more then often make a better tasting beer!

waiting seems like the best move. it should be fine. it always shocks me how much better the beer is just before it runs out.....

Hey Blakey,

Just wanted to ask if you took a gravity reading on the beer? If it's around 1.010 or less, and still bubbling, I'd let it sit for just another day or so and then bottle it.

I find with the Cooper's kits if you put them in the bottles around that gravity they carb up nice and quick.

It's all a matter of preference though, you'll get a feel for what you like after a few more brews.

Cheers!
Rod

I like to leave my beer upto 18 day to let all the crap settle on the bottom of the FV, then i transfer to a clean FV for bottling. :)

Brewing a familiar Dark Mild later today. (hint: Was the bastard tired? Or was he run over by a tire (tyre). No one really knows). One thing for sure. It will be a treat when done. Cheers!
